Grilled Cheese Sandwiches are one of the simplest comfort foods from my childhood. I can still remember my mom grilling us up grilled cheese after coming in from playing outdoors on a snowy day. But today I like a little more than just a Kraft slice between two slices of white bread. No offence mom, but thankfully there are so many options and varieties that there is no need to ever get bored!!
One of my old boyfriends used to grate up onion and add it to our grilled cheese. Sometimes I like to add veggie bacon, or coconut bacon, or sautéed spinach!!
