As we approach the end of the school year, our minds naturally turn to vacation. We love to spend time at the cottage, but while I'm there, I don't want to spend my time in the kitchen while everyone else is having fun!!
Meals at the cottage have to be easy and FAST but I still want to feel like I'm feeding my family healthy filling meals. I don't have access to my fully stocked kitchen, so I like recipes that take only a few simple ingredients that can also be used our other meals.
Barbecuing is a bonus, because it gets my men folk involved with the cooking. Plus it's often too hot to want to slave over the stove inside! So I like to plan at least a few meals that can be made on the grill. Enjoying the sunshine and a vacation-approved beverage while preparing a meal and watching the kids splash around in the water... what could be better than that?
Sharing meals like nachos and cheese fondue let us reconnect and linger longer over the dinner table. They are perfect when a game of Settlers or Monopoly are running long and we just want to graze as we play.

Veggie burgers make a regular appearance at the cottage when we're on vacation. If you want to make your own try this recipe Spicy Black Bean Burgers from For the Love of Leaves! Top it with some fresh lettuce and your favourite Zengarry Cashew Cheese. May I suggest the Smokey Jalapeño with this one?
#3 Zengarry Vegan Cheese Fondue
Roast some of your favourite veggies and serve them up on the deck with a nice red wine and this creamy vegan cheese fondue. It takes 4 ingredients and is ready in 5 minutes flat. I love dipping roasted baby potatoes, brussels sprouts, cauliflower and asparagus.
#4 Fully Loaded Nachos
What makes a better late afternoon snack than nachos dripping with your favourite toppings. Try salsa, black beans, olives, green onions and some Zengarry Smokey Jalapeño Cashew Cheese. Pop it in the oven at 375 degrees F for 10 minutes or until the cheese softens and the edges of the nachos just start to darken.
