This one has a rich, flavourful broth full of tender sweet onions and is topped with toasted french bread and my Gruyère style cashew cheese.
2 Tbsp. vegan margarine
5 medium onions, thinly sliced
1/2 tsp of dried thyme
1/4 cup red wine or port
4 cups vegetable broth
1 tsp of salt or to taste
fresh pepper to taste
3-4 slices of French bread, toasted
1/2 wheel of Fauxmagerie Zengarry Gruyère style cashew cheese, frozen
Sauté the onion in a thick bottomed soup pot in the margarine over medium heat for 10-15 minutes until they are soft and just beginning to brown. Turn the heat down to medium low, add the thyme, cover and cook, stirring frequently for another 30 minutes. You want your onions to be caramelized and sweet!!
Increase the heat to high and add the wine or port. Cook stirring constantly until the wine has cooked off.
Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes. Season with salt and pepper.
Pour the soup into onion soup bowls and top each bowl with a piece of toasted French bread. Grate the frozen Fauxmagerie Zengarry Gruyère style cheese over the top of each bowl.
Broil or bake in a 450 degree oven until the cheese is melted and beginning to brown. Garnish with chopped fresh parsley.
