4 baked potatoes
4 Tbsp Fauxmagerie Zengarry Garlic and Fine Herbs cashew cheese
3 green onions chopped
1.5 Tbsp vegan bacon bits
1/2 tsp sea salt
Slice each baked potato in half and scoop out the potato flesh from each half into a bowl. To the scooped out potato add the rest of the ingredients and mix well.
Scoop the potato mixture back into each potato skin. Bake at 375 degrees F for 15 minutes.
Garnish with cashew sour cream, more bacon bits and chopped parsley.
