Korean Kimchi Fried Rice Recipe
Makes 1 serving
1-2 tablespoons canola or peanut oil
2 green onions, white and green portions sliced separately
1 small clove garlic, minced
1/2 cup finely chopped kimchi
1 cup of sliced shiitake or button mushrooms
1/2 cup broccoli florets
1 cup cooked cold rice
Dash of soy sauce
Dash of ground white pepper
Dash of sesame oil
- In a wok over high heat, stir fry sliced shiitakes until tender (2-3 minutes) in very hot oil, add chopped white onion and garlic and sauté for 30 seconds more.
- Add the rice and toss for 1 to 2 minutes, or until well-combined not hot throughout.
- Sprinkle with soy sauce, white pepper, and sesame oil. Add the kimchi and cook over gentle heat 1-2 minutes. Stir until well-combined and steaming hot. Serve immediately, sprinkled with the sliced green onion.
TIP: Add your kimchi at the end an only heat gently to avoid killing the healthy probiotic cultures that are in your kimchi!!
