Weekday breakfasts can be a challenge in our house. With my son leaving for school at 7:30 am and being a teenager that hates to get up early, having a breakfast that he can grab and eat on the way to school is just about the only way to make sure he eats in the mornings!
Protein bars have been his staple, but we are working on introducing some healthier, more filling and tastier options!! Beans are a great source of protein and fibre and they really do keep you feeling full for longer!
These Breakfast Burritos have everything I could ask for.... plenty of protein, greens, whole grains.... and BONUS it takes about 5 minutes to make!!
That's right up my alley!! Cuz, even though I'm not a sleepy teenage boy, I'm not so excited about waking up an hour earlier to make breakfast!
I should call these the busy mom's ultimate breakfast burrito!! ;)
These burritos use ingredients that I ALWAYS have on hand too. If you don't have an awesome friend that makes you authentic Mexican refried beans you can use your favourite refried beans recipe or just use canned beans that you find in the Mexican section of the grocery store.
If you get tired of this version or need some inspiration for variety, there are many ways of mixing it up. Here are just a few ideas:
-Veggie Paté + Zengarry Gruyère with micro greens and olives
-Tofu Scramble + Zengarry Sundried Tomato + greens and salsa
-Replace refried beans with hummus or black bean dip and use baby kale or spinach instead of lettuce
-Use corn tortillas to make your burritos gluten-free
Don't feel like you need to limit these delicious burritos to breakfast! They are also perfect for lunch or dinner on the go!
Makes 2 burritos
2 whole wheat tortillas
1/2 cup refried beans
4 Tbsp. Zengarry Smokey Jalapeño Cashew Cheese
1/2 a ripe avocado sliced
2 green onions chopped
2 handfuls chopped lettuce or other greens
Salsa and sliced Kalamata olives to taste
Spread 2 Tbsp Zengarry Smokey Jalapeño down the middle of each tortilla. Spread 1/4 cup refried beans on top, add the avocado, green onion, olives, salsa and greens. Place each tortilla on a piece of aluminum foil. Fold in the sides of the tortilla around the fillings and wrap the foil around tightly. Twist the top and bottom of the foil packet like a cigar.
