The best fruit salads are using fruit that is in season, farmed local and even better when you can buy directly from the farmer. Here we used sugar pears, white nectarines, peaches, apricots, cherries and plums from the yard. The (figurative) cherry on top is the Double Creme cashew cheese whipped topping.
Feel free to adjust the ratios as you like!
Cherries (pits removed/halved)
1 Tablespoon Maple Syrup
1 Tablespoon Lemon Juice
1/4 cup Fauxmagerie Zengarry Double Cream Cashew Cheese
1 cup coconut whipped cream (such as So Delicious Cocowhip)
Optional: cinnamon, vanilla, chocolate topping.
Put ¼ cup Fauxmagerie Zengarry Double Creme cashew cheese in a medium bowl and set on the counter for 30 min so that it gets to room temperature and will blend easily.
Cut all fruit into bite-sized pieces and place in a large bowl, add maple syrup and lemon right away to prevent the fruit from browning, and mix it together.
The topping is so easy! ¼ cup Double Cream with 1 cup Coconut Whipped Cream (1 part Fauxmagerie Zengarry Double Creme cashew cheese and 4 parts non- dairy whipped cream if you want to make more topping). Give it a taste and add extra whipped cream if you'd like it sweeter.
Scoop fruit salad into waffle cup or serving dish (we put extra whipped cheesy topping in the bottom of the cups as well).
Put a dollop of creamy whipped topping on top of the fruit then add your optional sprinkle of cinnamon, fresh vanilla, chocolate shavings.
Add the final (literal) cherry on top to complete ☺
