michiemango’s SPINACH & ZUCCHINI PIZZA 🍕✨🙊
This pizza reminds me of something that would be served at one of those cute, Italian bistros that serve perfectly with a chilled bottle of white wine. Yum! Not to mention a great transition into fall, am I right? 🥂🍁💛

3 tbsp extra virgin olive oil 1/2 cup finely chopped onion 1/2 cup finely diced red bell pepper 1/2 tsp crushed dried red chillies 1 package frozen spinach (thawed and squeezed) 1 package of Fauxmagerie Zengarry @zengarryveg Garlic and Fine Herbs cashew cheese 2 tbsp fresh lemon juice 1 fresh tomato, diced 1 whole grain pizza crust Salt and pepper, to taste
1. On medium heat, sauté onions, red bell pepper in a tbsp of olive oil. When the onions have become transparent, add in the zucchini and sauté for a few more minutes. 2. Lower the heat to medium and add the cashew cheese, the rest of the olive oil, spices, tomato, lemon juice and spinach to the skillet and stir to combine. Cook until zucchini mixture is heated through and somewhat thickened. 3. Transfer the mixture into a pizza crust. Spread evenly. Sprinkle with a pinch of paprika and bake at 400 degrees, for 8-10 minutes or until the crust is golden. 🍽
Note: the original recipe called for artichoke (instead of zucchini) and 1/2 package of cheese instead of full. Tweak it however you like, but I love how cheesy this turned out! 🙊
