Roasted Veggies Sandwich

This sandwich like a hot salad between two loaves. It's the best of both worlds. And besides, there is cheese! In this recipe, we suggest a list of vegetables to grill, but you can add all your favorite vegetables. It's also a good opportunity to empty your vegetable drawer!


  • 4 thick slices of bread

  • ½ c. artichokes

  • ½ c. peppers (red, orange, green), sliced

  • 1 zucchini, sliced thinly

  • 1 fresh tomato, cubed

  • 1 c. kale

  • 1 onion, chopped

  • ½ c. jalapeno

  • ½ c. containing Fauxmagerie Zengarry creamy Swiss cashew cheese

  • 1 c. olive oil

  • Salt and pepper, to taste


  1. In a skillet, grill all vegetables in olive oil for 5-7 minutes. Once the vegetables are grilled and crispy, season them with salt and pepper.

  2. On the toasted slices of bread, add the Zengarry Fauxmagerie creamy Swiss cashew cheese and separate the grilled vegetable mixture on both sandwiches.

  3. Serve hot.
