This vegan barbecue cauliflower wrap is sweet, smokey and tangy. It’s perfect for summer because you can grill up the cauliflower filling outdoors, and then quickly assemble it before serving. It uses our BBQ cauliflower wings recipe and then wraps it up with fresh veggies and cheesy Garlic & Fine Herbs fauxmage.
1 head cauliflower, cut into medium size floret wedges
Ground black pepper and salt
½ cup barbecue sauce of your choosing
4 8-inch tortillas
½ package Fauxmagerie Zengarry Garlic & Fine Herbs fauxmage
Spring mix lettuce
Fresh tomatoes, sliced
For Cauliflower wings:
Cut cauliflower into floret wedges not too small to fall apart through grill and not too large to cook through.
Coat florets in olive oil and season with salt and pepper.
Grill cauliflower for 5 minutes on medium-high BBQ.
Coat florets in BBQ sauce and return to grill for a few more minutes, allowing the sugars in the sauce to caramelize.
Spread a generous serving of Fauxmagerie Zengarry Garlic & Fine Herbs cashew cheese on each tortilla.
Top with ¼ of cauliflower florets.
Add spring mix, shredded carrots and tomato slices.
Wrap everything up. Optional: Skewer the wraps with toothpicks and then return to grill to get a crispy tortilla with grill marks.
Slice in half and serve!
