Tips for hosting a perfect Mother's Day tea party

Mother’s Day is the perfect time to host an afternoon tea party. Traditional English teas serve as more of a small meal before a full dinner, but this would make a perfect dinner after a heavy brunch with the rest of the family. Below are three sandwich recipes to get you started, but it certainly doesn’t hurt to mix in some small pastries.

1. Cucumber Sandwiches

Cucumber sandwiches are the first thing most people think of when it comes to afternoon tea, and for good reason. They’re delicious while still being simple, light and easy to prepare.


Recommended tea pairing: Go with something light to avoid overpowering the delicate flavours in the sandwich. Zyo Chamomile Tea is clean and simple, just like the sandwiches.


Ingredients

  • 1 english cucumber

  • White bread

  • 1 package Fauxmagerie Zengarry Double Crème

  • Salt and white pepper, to taste

Instructions

  1. Finely slice the cucumber and sprinkle with salt. Let sit in a strainer for about ten minutes, then pat dry with a paper towel.

  2. Spread Double Crème fauxmage on one piece of white bread.

  3. Layer cucumber slices, then top with a sprinkle of white pepper.

  4. Top with another slice of bread and cut diagonally into halves.

2. Smoked Salmon Sandwiches

Smoked salmon is another classic, and one of our favourites to veganize. This carrot-based take on lox pairs perfectly with our Garlic & Fine Herbs fauxmage.


Recommended tea pairing: We recommend a roasted black tea. Alternatively, Lapsang souchong is a type of black tea that originates in China. It’s smoked over pinewood fires, so the tea’s flavour matches that of the faux smoked salmon.

Ingredients:

  • 4 carrots, peeled and cleaned

  • 1 Tbsp. soy sauce or tamari

  • 1 tsp. Dulse flakes or other seaweed flakes

  • 1/2- 3/4 tsp. liquid smoke

  • Juice from 1/2 a lemon

  • 1 package Fauxmagerie Zengarry Garlic & Fine Herbs

  • White bread

Instructions:

  1. Preheat the oven to 400 degrees F.

  2. Slice the carrots into long, thin strips using a carrot peeler.

  3. In a small bowl, mix together soy sauce, Dulse flakes and liquid smoke.

  4. Line a shallow oven proof pan (like a pie dish) with aluminum foil. Place the carrots onto the aluminum foil and drizzle with the soy sauce mixture. Toss the carrot strips with the marinade and then fold the aluminum foil up around the carrots into a pouch.

  5. Bake the carrot lox at 400 degrees F for 15 minutes. Remove from the oven and allow it to cool completely. You can put them in the fridge to speed up the process.

  6. While the lox is cooling, spread Fauxmagerie Zengarry Garlic & Fine Herbs or Horseradish Dill fauxmage on a piece of white bread.

  7. Top with a thin layer of carrot lox and squeeze lemon juice over the lox.

  8. Top with another slice of bread and cut diagonally into halves.

3. Tomato-basil “turkey” sandwiches

These sandwiches are a little more filling than traditional tea sandwiches, but the addition of fresh alfalfa sprouts keeps them light-tasting.


Recommended tea pairing: Balance the strong umami flavours with something lighter and sweeter. We like Zyo’s Flower Delight, an herbal blend of flowers and camomile tea.


Ingredients

  • 1 package of vegan turkey slices or smoked tofu

  • One package Fauxmagerie Zengarry Sundried Tomato & Basil

  • 1 container (about ½ cup) alfalfa sprouts

  • White bread

  • Salt or pepper, to taste

Instructions

  1. Spread Sundried Tomato & Basil fauxmage on one slice of bread.

  2. Add a layer of vegan turkey or tofu. If using deli slices, fold them in half and overlap them to add more volume.

  3. Add a layer of alfalfa sprouts.

  4. Top with salt and pepper as needed.

  5. Top with another slice of bread, and then cut into halves diagonally.
