A delicious side to any supper or a fantastic holiday dish!
4 baked potatoes
4 Tbsp. Fauxmagerie Zengarry Garlic and Fine Herbs cashew cheese
3 green onions chopped
1/2 Tbsp. vegan bacon bits
1/2 tsp. sea salt
1. Slice each baked potato in half and scoop out the potato flesh from each half into a bowl. 2. Add the rest of the ingredients to the potato flesh and mix well.
3. Scoop the potato mixture back into each potato skin.
4. Bake at 375 degrees F for 15 minutes.
5. Garnish with cashew sour cream, more bacon bits and chopped parsley.
