eryone loves pancakes, but sometimes it’s impossible to decide how you want to top them! Maple syrup is the obvious choice, but what about fresh fruit, or chocolate sauce? How about all of the above? Our strawberry pancake skewers combine tiny vegan pancakes with slices of banana and strawberry and vegan chocolate sauce. To top it all off, we pair it with a creamy, dairy-free dip made from our Double Crème fauxmage and maple syrup. Feel free to get creative and swap out the fruit, or add a different flavour to the pancakes!
1 cup flour
1.5 Tbsp organic sugar
1.5 Tbsp baking powder
½ tsp salt
1 cup non-dairy milk
1 tsp vanilla
1 Tbsp neutral oil or vegan butter
1 pint fresh strawberries, sliced into rounds
1 banana, sliced
Vegan chocolate sauce
Maple Brie dip
1/2 package Fauxmagerie Zengarry Double Crème cashew cheese.
1 Tbsp maple syrup
In a large bowl, mix the flour, sugar, baking powder, and salt.
Whisk in the non-dairy milk until you have a smooth, creamy batter.
Melt butter or heat oil in a frying pan.
Once the pan is hot, use a spoon to measure out small amount of batter, no more than a tablespoon per pancake.
Once the tops of the pancakes start bubbling, flip them and fry for a couple more minutes.
Let the pancakes cool slightly so that they’re firm enough to be skewered.
Start with a pancake on each skewer.
Add a slice of strawberry.
Spread chocolate sauce on each banana slice, then add the banana slices to the skewer.
Add another slice of strawberry and another mini pancake.
