Given these chilly days, I've been craving carbs and comfort foods, like these incredibly delicious garlicky cheesy stuffed potatoes. Believe me.... You don't have to give up all your favourite comfort foods when you give up dairy.
Your're going to want to make enough to share!!
4 baked potatoes
4 Tbsp Fauxmagerie Zengarry Garlic and Fine Herbs cashew cheese
3 green onions chopped
1.5 Tbsp vegan bacon bits
1/2 tsp sea salt
Slice each baked potato in half and scoop out the potato flesh from each half into a bowl. To the scooped out potato add the rest of the ingredients and mix well.
Scoop the potato mixture back into each potato skin. Bake at 375 degrees F for 15 minutes.
Garnish with cashew sour cream, more bacon bits and chopped parsley.
