As life gets busier, I have less and less time for preparing meals for my family, so I'm always looking for time saving tricks. As much as my 13 year old son would love it if we ordered pizza every day, I need to get healthy food into him as often as I possibly can! He is a super fussy eater... and getting fussier with each passing year it seems.
One of my time saving tips is LEFTOVERS!!! If you're going to take the time to make something, make lots! Leftovers are another meal that I don't have to make!! Love it. And if you can repurpose your leftovers even better! They won't even know they're eating leftovers!!
Brown rice is one of those leftovers that is super easy to repurpose. It goes with everything. So when I cook brown rice..... which takes 40 minutes to cook.... I make LOTS!! It'll last all week and I use it with curries, beans, chilli, whatever! So if you have leftover rice this dish is ready in minutes.
Another one of my time saving tips is Cookin' Greens. These greens are ready to go. No washing, or chopping required! And better yet, they don't go bad. In the winter I am often guilty of stocking my fridge with fresh kale and then not getting to use it until it's wilted and so sad looking that it goes into the trash. Pull Cookin' Greens out of the freezer and you're good to go!
Field Roast sausages are another of the mom tricks I keep up my sleeve. My son will eat these. Thank God for Field Roast!!
I came up with this recipe on one of those days that I had about 10 minutes to get a meal on the table. Leftover rice, Cookin' Greens and Field Roast to the rescue. Add a little of my cheesy Queso sauce and a few of your favourite pizza garnishes and BAM! Pizza in a bowl.
Sometimes I add red peppers, cauliflower, broccoli, tomatoes, asparagus.... whatever I happen to have in the fridge...
1 Tbsp. olive oil
1 onion, minced
2 cloves garlic, minced
1 package Cookin' Greens frozen kale
1 package Field Roast Italian sausages, sliced into rounds
Zengarry Queso sauce**
Olives for garnish
Heat a skillet over medium high heat, add olive oil and onion. Sauté a few minutes then add the sausage and cook about 5 minutes, stirring and flipping the sausage slices. When the sausage is slightly browned add the kale and garlic. Cook stirring for a few more minutes.
Put warm rice in bowls, top with sausage and greens, and Zengarry Queso sauce. Garnish with olives.
Zengarry Queso Sauce**
In a small sauce pan combine Zengarry Smokey Jalapeño Cashew Cheese and almond milk over medium low heat. Chop the cheese with a spoon and whisk until smooth and creamy. Add salsa and cayenne pepper and warm. Don't heat too much, you don't want it to boil or stick to the pan!
