Another of my super simple gluten-free entertaining recipes; mushroom caps stuffed with cheesy artichoke dip! Make a double batch of my Hot Artichoke Dip, serve it alone at one party and at the next party mix it up and use it to make these delectable appies!!
12-15 Large white mushrooms with stems removed
1 recipe of my Hot Artichoke Dip (skip the broiling step)
Toasted Pine Nuts for garnish
Preheat the oven to 375 degrees F. Gently wash the mushroom caps with a damp paper towel. Brush each mushroom cap with olive oil, and stuff with one tablespoon of Artichoke dip.
Bake for 15-20 minutes. Garnish with toasted pine nuts, a sprinkle of paprika and/or chopped herbs.
