We've all heard it: Breakfast is the most important meal of the day!
But healthy and filling weekday breakfasts can be a challenge amiright? With lunches to make and busses to catch, having a breakfast that you can grab and eat in the car on the way to work will make it that much easier to ensure that you're starting your day off on the right foot!
This breakfast sandwiches has everything you could ask for...plenty of protein, greens, whole grains and BONUS it takes about 15 minutes to make! Make a bunch of them on Sunday night and keep them in the fridge for the week.
2 whole wheat tortillas
1/2 cup of refried beans
4 Tbsp. of Fauxmagerie Zengarry Smokey Jalapeño cashew cheese
1 ripe avocado, sliced
2 green onions, chopped
2 handfuls chopped lettuce or other greens
2 Tbsp. of salsa
2 Tbsp. of Kalamata olives, sliced
1. Spread 2 Tbsp Zengarry Smokey Jalapeño down the middle of each tortilla. Spread the refried beans on top, add the avocado, green onion, olives, salsa and greens.
2. Place each tortilla on a piece of aluminum foil. Fold in the sides of the tortilla around the fillings and wrap the foil around tightly. Twist the top and bottom of the foil packet like a cigar.
