Quinoa salad with creamy avocado Garlic & Fine Herbs dressing

This salad is so hearty, with quinoa, vegetables and super seeds for texture, paired with a creamy dressing that ties all the flavours together.


Salad Ingredients

  • 1 cup cooked quinoa

  • 3 Tablespoons hemp hearts

  • 3 Tablespoons pumpkin seeds

  • 3 Tablespoons sunflower seeds

  • 1 large green pepper

  • 1 large cucumber

  • 2 tomatoes

  • 1 small red onion

Dressing Ingredients

  • ½ container Fauxmagerie Zengarry Garlic and Fine Herbs cashew cheese

  • 1/4 unsweetened almond milk

  • Juice ½ lemon

  • 2 Tablespoons white wine vinegar

  • 2 Tablespoons fresh dill

  • 1 avocado

  • 1 teaspoon Herbamare


Instructions:

  1. Add one cup of cooked, cooled quinoa into a salad bowl. Add chopped green pepper, cucumber, tomatoes, and red onion. Add hemp hearts, pumpkin seeds and sunflower seeds to the salad.

  2. With a hand mixer or blender add all the dressing ingredients and blend until smooth. Use a spatula to scrape the desired amount of dressing into the salad and stir. You can save any remaining dressing in a container to use over the next few days - it makes a great veggie dip! ☺

  3. Toss, serve and enjoy.
