Zengarry French Onion Soup

This delicious vegan comfort food makes it easy to ditch the dairy! You won't feel like you are missing out with our Zengarry Creamy Swiss cashew cheese and topped with toasted French bread. Wrap yourself in a blanket, grab your bowl and indulge!


2 Tbsp. vegan margarine

5 medium onions, thinly sliced

1/2 tsp of dried thyme

1/4 c. red wine or port

4 c. vegetable broth

1 tsp. of salt or to taste

fresh pepper to taste

3-4 slices of French bread, toasted

1/2 pkg. Fauxmagerie Zengarry Creamy Swiss cashew cheese, frozen


1. Sauté the onion in a thick bottomed soup pot in the margarine over medium heat for 10-15 minutes until they are soft and just beginning to brown. Turn the heat down to medium low, add the thyme, cover and cook, stirring frequently for another 30 minutes. You want your onions to be caramelized and sweet!!

2. Increase the heat to high and add the wine or port. Cook stirring constantly until the wine has cooked off.

3. Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes. Season with salt and pepper.

4. Pour the soup into onion soup bowls and top each bowl with a piece of toasted French bread. Grate the frozen Fauxmagerie Zengarry Creamy Swiss cashew cheese over the top of each bowl. Enjoy!
