Salsa Fresca

This recipe is the perfect way to use up all the garden fresh tomatoes that come with the late summer. It makes a super impressive appetizer and can be prepared in about 30 minutes!


  • 1 1/2 cups chopped tomatoes

  • Juice of one lime

  • 1/4 cup cilantro, chopped

  • 1/2 red onion, diced small

  • 1/2 jalapeno peper, minced

  • 1/2 tsp cumin

  • Salt and pepper, to taste.


  1. Preheat oven to 350°F

  2. Combined tomatoes, lime juice, cilantro, red onion, jalapeno, cumin, salt and pepper.

  3. Refrigerate salsa while you prepare baguette.

  4. Slice baguette.

  5. Brush slices with olive oil on both sides, then bake them in the oven until slightly browned.

  6. Top with thin slices (or a spread) of Creamy Swiss fauxmage and a spoonful of salsa.
